That said, the tech associated with &#8220;<a href=\"http:\/\/www.ediblebrooklyn.com\/2014\/09\/22\/hecho-mano\/\" target=\"_blank\">nixtamalization<\/a>&#8221; of corn is <a href=\"https:\/\/en.wikipedia.org\/wiki\/Nahuatl\" target=\"_blank\">Aztecan in origin<\/a>, and therefore is not associated with current-day borders. You&#8217;re just as likely to find nixtamal in Guatamela or Belize; in short, it&#8217;s a Yucatan (or Mesoamerican) thing. The modern-day tech for nixtamalizing masa is not only highly regarded, but usually proudly displayed. No hidden techniques or trade secrets here. Watching these machines work is fascinating, and again <a href=\"https:\/\/www.flickr.com\/search?sort=relevance&#038;text=nixtamal\" target=\"_blank\">the food associated with nixtamal<\/a> is exquisite.
